Condolence Cookies! "Sonshine" Kisses



I am quite convinced that these cookies are the best on the planet. They certainly brighten my day! I always look forward to going to my friend Susie's house; because she always makes these perfect pieces of sunshine. I then got to thinking about sharing this gift with others. How appropriate that these cookies should be named "Sunshine Kisses". So I put my "lil' diva" spin on them and decided to rename them "Sonshine Kisses" and share them with those who could use a little more "SONshine".

One of my friends just recently lost her grandmother, and I thought about making this special little condolence gift for her. Is it going to make her instantly feel better? No. But it let's her know that I was thinking of her and put the effort into making something especially for her during this hard time. I made up a label for the front that says "Praying that you may feel the warmth of the SON during this time of loss. I then concluded it with a bible verse from Jeremiah 31:13. The jar is a cracker jar which set me back about 3 bucks.

After I did this, I began to think about how this would be great for those struggling and going through hard times. So, I came up with a slightly different phrase for that one with a verse from Nahum 1:7.

SONSHINE KISSES RECIPE (Adapted from The Pampered Chef)

Ingredients:
1 package (18-19 ounces) lemon cake mix
1 egg, slightly beaten
1/3 cup vegetable oil
2 tablespoons water
1/3 cup pecans, chopped

Glaze:
1 lemon
1/2 cup powdered sugar

Directions:
Preheat oven to 375°F. Combine cake mix, egg, oil, and water in bowl; stir until thoroughly combined. Mixture will be slightly dry. Chop pecans and then stir into dough. Using a small scoop drop level scoops of dough 2 inches apart onto cookie sheet. Bake 13 minutes or until slightly browned. Let cool at least 3 minutes.

Remove 1 teaspoon zest from lemon and 1 to 2 tablespoons of juice from lemon. Whisk zest, juice, and sugar in bowl. Drizzle glaze on cooled cookies.
